Decided to make these short daily posts from my mobile phone, see if I can update daily with some words and few pics. This is today’s garniture for the veal dish. It was Roman lettuce leaves stuffed with carrot and celery warm salad with a brain dressing. On top placed a bone marrow coin with parmesan and truffle crust.
It’s a really bad picture of the leftover dish, so it doesn’t look as good as it should (kinda messy being moved around). The Roman was baked in the oven with veal jus until browned and the veal served with cornichons branoise with sauce. We made 75 of these today and 180 of these last Friday’s event. These plates were flying….
