After about a month into the program, our class already started taking part in a real Restaurant Service to the school restaurant. We were divided into groups, each group responsible for a dish, and the other class did the same so that there were two options of each dish for the dinners to choose from. Each group had a team leader with more responsibilities and we acted out like a true brigade. Next morning we returned for the lunch service of the same meal. One of these services we had Guest Chefs to make it more interesting.
