This morning I felt like eating something different from all the Matza-Brite we eat every day on Passover. So I’ve made a really easy microwaved apple matza crumble.
Started by peeling apples and cutting them to fours.
Then I put them in a microwave container with just a little bit of water and some cinnamon and cooked in the microwave oven for about 2-3 min.
In the meantime I took some matza flour which is actually just crumbs of matza and mixed it with 2-3 ts of sugar (didn’t have sticky brown sugar but I guess it would be better). Diced some butter and melted it then mixed it to the crumbs until they were homogenous. Took out the apples and drained their liquids to a cup. Now I also had a delicious hot cider with cinnamon (it can be diluted if too sweet, or add some sweetener if necessary).
I tucked the crumbs over the apples, returned a small portion of the liquids just to keep it moist on the bottom. Now back to the microwave oven for another 2-3 min. It’s done! I served it to Barak with cottage cheese (I would prefer sour cream but whatever you have on the fridge can work. No, not mustard this time!) and drizzle of maple syrup (100% from Canada of course 馃槢 ). I think he was happy to wake up to this treat!
