This week I felt like pickling the box of little plums I bought. They were not turning sweeter so why not.

The hardest part that also took the longest is to take out all the pits. They were stubborn.

Instead of white wine I decided to use Cider which is a bubbly beverage made from apples and contains a small amount of alcohol. Boiled it with cane sugar and rice vinegar and some black pepper grains.

Poured over the raw plums.

That’s it basically!

So simple, last thing is to wait for this to cool down to room temperature and it’s good to go.

Few hours later… lightly pickled, tastes completely different.. I wish I had more spices to add like star anis, cinnamon, cardamom.. I know it may look like compote but it’s definitely not! The plums are not cooked in the syrup and they are pretty firm.

It turned tart and almost vegetable like but with a tender sweetness, as I didn’t add that much sugar. Now I can use it for so many things!

Zucchini, grilled chicken breast

Pickled plums (they look like tomatoes!)

Raw-milk cheese from the market

Never without some very thinly sliced onions

Vinaigrette: olive oil, balsamic vinegar

Salt, pepper, fig marmalade and a dash of mustard (important to keep it all together)

I think the tartness of the plums was very complementary for the chicken. Good match!

I like chicken salad.

I hope this process will also keep the plums for a longer time. Will check it out as long as I have space in my fridge.
