My favorite dish of the night. All secrets revealed.

Carrot cream:

The same carrots that made the terrine‘s broth, were used here. Came out tasteful and soft after pressure cooked with turkey neck.  I put them in the blender together with some of the broth itself, cooking cream (15%), orange zest, and the juice of of half an orange.

The huge amount of garlic I bought in the market had to be peeled and the baby onions as well. Messy job.

  Grilled Squid: there isn’t any picture of the hardest part of prepping the squid- cleaning it. I bought whole baby squids in the market and they had to be cleaned from the insides and some hard stuff. It took quite long and was very stinky. If you don’t really enjoy these kind of things, pay for the cleaning so you don’t have to do it yourself. The “heads” were kept of course. It’s the best part!

I saved some of the parsley from dish #2 and mixed with basil as well to make green herb oil.

 I got warm responses for this dish. It was loved by the squid opponents as well, and the small squid legs found a happy stomach to be consumed at in seconds (Chen). The reason is that even without the squid it could be a dish on it’s own.
