Yes, as I was saying, we had many bananas waiting for their happy ending. What is the first thing that comes to one’s head when saying “rotting bananas”? It’s… Banana Bread of course! We searched for the recipe with the most banana usage (X 1.5 – so total of 6 bananas used here) and kinda mixed 3-4 recipes together. I’ll let the pictures do most of the talking from now on:

Half portion I wanted to make as cupcakes:

Rotting bananas, still in pretty good shape!

Spices! I grounded some cardamom and star anise to make it interesting.
Squashed these bananas..

Added the liquids: butter, eggs, vanilla extract …
And then the dries: Flour, baking powder..

Cinnamon, salt and nutmeg, sour cream and the grounded spices.

Then mixed in some dried blueberries…
It was a hot day to turn on the oven meaning dad had to utilize this heat at maximum efficiency: adding zucchini on the bottom rack.
Not long after, we took out these little babies and against all instructions, ate some right away.

The bigger mold took slightly longer but because of it’s shape, didn’t take as long as the recipes said.

Slice with sour cream:
Note to self, for next time: I like it more dense and moist so.. less baking powder and more liquids (two more bananas could go in easily). Also, the cardamom was very noticeable, I can put a bit less.
Barak liked it covered with butter and topped with gruyere cheese. Cheers!

By the way, more bananas waiting to be dealt with. I’ll talk about it next post.
